Cookies can be kept at room temperature for 2 weeks if contains no cream. To store, freeze for 2-3 months. Thaw at room temperature for 2-3 hours and serve.

Love these cookies! A simple cookie on bottom, topped with raspberry jam and a swirl of the almond that is soft but also a little crisp. In the summer I refrigerate them so they have a nice cooling taste.
